Walnut Balls in Apricot Sauce (Lacto-ovu vegetarian recipe)
Ingredients:
1 1/4 cup cracker crumbs
3/4 cup ground walnuts
1/2 tsp salt
1 small onion, finely chopped
1 1/2 teaspoon sage
3/4 cup cheddar cheese, grated (may be substituted with soy cheddar cheese)
2 garlic cloves, pressed
3 tbsp parsley, minced
4 eggs
Directions:
1. Mix all ingredients. Form into walnut-size balls
2. Deep fry till quite firm
3. Place meatballs in casserole dish
Apricot Sauce:
1/4 cup oil
1/4 cup lemon juice
3/4 cup apricot jam
1/2 cup ketchup
2 tbsp brown sugar
2 tbsp onion, chopped
1/2 tsp salt
1/2 tsp oregano
dash hot pepper sauce
Directions:
1. Mix all ingredients
2. Bring to a boil
3. Pour apricot sauce over meatballs
4. Bake at 325 degrees for about 30 minutes
